Garlic Vinegar Recipe
Ingredients
3 cups distilled white vinegar
20 cloves garlic, crushed, or 8 shallots, coarsely chopped
2 teaspoons black peppercorns
1 cup dry red wine
Garlic chives (optional garnish)
Directions
1 Wash and sterilize a 1 1/2 quart wide-mouth jar and its lid by boiling for 10 minutes.
In a medium-size enameled or stainless steel saucepan, bring the vinegar to a simmer.
Meanwhile, place the garlic, peppercorns, and wine in the sterilized jar.
Add the hot vinegar and mix thoroughly.
Let cool to room temperature, covertightly, and store in a cool, dry place for 2 weeks.
At the end of 2 weeks, strain the vinegar through a fine sieve into a sterilized 1 -quart jar, add a few garlic chives for decoration if desired, and seal with a sterilized lid.
