Garlic Soup Recipe

Ingredients
20 to 25 garlic cloves, peeled
1/4 cup olive oil
8 cups chicken stock
1 tablespoon chicken stock base
1/4 teaspoon each ground sage, ground thyme and black pepper
2 whole cloves
1/2 teaspoon each crumbled dried oregano and paprika
8 sprigs parsley
Salt
1/2 cup dry sherry
8 slices sourdough French bread, toasted
8 tablespoons each freshly grated
Gruyere and Parmesan cheese
Directions
Saute garlic in oil until just starting to turn golden.
Add stock, stock base, seasonings and herbs.
Cover, bring to boil, lower heat and simmer 1 hour.
Strain, reheat and adjust seasonings, adding salt if needed.
Just before serving add sherry.
Ladle soup into heated ovenproof bowls, top with toast, sprinkle with 1 tablespoon of each cheese, and broil to melt cheese.
