Garlic Sauce With Pignoli Nuts Recipe
Ingredients
6 cloves garlic
1/2 cup vinegar or lemon juice
1 teaspoon salt
2 1/2 cups olive oil
1/2 cup pignolia nuts
1 egg
4 or 5 cups mashed potatoes or 10 slices bread
Directions
Mash garlic in mortar with salt.
Add pignolia nuts and pound until well blended.
Add potatoes, or bread that has been soaked in water to soften and squeezed to remove excess moisture.
If a stronger garlic taste is desired, use only 3 or 4 cups potatoes.
Transfer mixture to mixing bowl.
Clean mortar with vinegar or lemon juice and add to sauce.
Gradually add olive oil, beating with an electric beater until all oil is absorbed.
Add the egg and continue beating until smooth.
Add 1/2 cup warm water for a thinner sauce.
Add pignolia nuts and pound until well blended.
