8 cloves garlic
 
1 cup olive oil
 
Dash salt
 
2 lemons, juice of
 
4 large boiled potatoes, mashed
 
1 1/2 cups fish stock

Directions

Crush garlic with a dash of salt in a mortar or a heavy bowl.
Add mashed potatoes and pound until well blended.
Add olive oil and lemon juice alternately and keep pounding until ingredients are thoroughly blended.
Add the stock slowly, stirring until sauce is at the creamy consistency desired.
