6-7 cloves garlic
1/3 cup vinegar
3 or 4 boiled potatoes, mashed
Salt and pepper to taste
1 cup olive oil
Directions
Crush garlic in a ghoudi, or mortar.
Add mashed potatoes and pound well until blended to a paste.
Add olive oil and vinegar alternately in very small amounts, stirring sauce briskly with the pestle.
Add salt and pepper.
Continue to stir in a rotary motion until sauce is stiff enough to hold its shape.
