Directions

GETTING READY
Two days before serving:
1. In a small bowl combine seasoning salt and sugar.
2. Using clean hands, coat pork thoroughly with seasoning mixture.
3. Place pork in pan, cover with plastic wrap and refrigerate 48 hours.
4. On the day of roasting preheat oven to 450 degrees.

MAKING
5. Drizzle pork with basting oil.
6. Place on wire rack on baking sheet and roast for about 15 minutes.
7. Reduce oven to 350 degrees.
8. Roast about 60 min until internal temp reaches 145 degrees.
9. Check by inserting thermometer halfway into thickest part of pork.

SERVING
10. Remove from oven let rest 5-10 min and serve.
