Garlic Dressing Recipe
Ingredients
| Garlic | 4 Clove (5gm), crushed | |
| Olive oil | 1/2 Cup (16 tbs) | |
| Peanut oil | 1/4 Cup (16 tbs) | |
| 1 egg yolk at room temperature | ||
| Lemon juice | 1 1/2 Tablespoon | |
| Dash of cayenne (about 1/16 teaspoon) | ||
| Ground black pepper | 1 To taste | |
| Dry white wine | 1/4 Cup (16 tbs) | |
| Salt | To Taste | |
Directions
Soak the crushed garlic in the salad oil for 1/2 hour.
Place the egg yolk, lemon juice, and seasonings in a food blender.
Blend a moment more.
Mix the garlic oil and olive oil and then add in a stream.
Remove the mixture from the blender and stir in enough wine to thin it to your taste.
This is great with plain green endive or romaine lettuce.
