 Baby Lima beans - 1 cup, dried
 Celery - 1 stalk, finely chopped
 Scallions2 Tablespoon, minced
 Garlic1 Clove (5gm), crushed
 Parsley1 Tablespoon, minced
 Vinaigrette dressing1/4 Cup (16 tbs)

Directions

GETTING READY
1. Soak the beans overnight; drain, rinse and cover with water

MAKING
2. In a saucepan, cook the beans till tender
3. In a small bowl, mix together celery, scallions, garlic and parsley and toss with the beans along with Vinaigrette dressing
4. Marinate in the refrigerator overnight

SERVING
5. Serve chilled
