Ingredients

 
1 tablespoon cooking oil
 
2 to 3 cloves garlic, minced
 
2 medium carrots, bias sliced
 
1/2 of a medium sweet red pepper, cut into strips
 
1/2 of a medium green pepper, cut into strips
 
1/2 of a medium yellow pepper, cut into strips
 
1 small onion, sliced and separated into rings
 
1 cup sliced fresh mushrooms

Directions

Preheat a wok or large skillet over high heat; add oil.
Add garlic and stir fry for 1 minute.
Add carrots and stir fry for 2 minutes.
Add peppers and onion and stir fry for 2 minutes.
Add mushrooms and stir fry about 2 minutes more or till vegetables are crisp tender.
