Gardiners Bay Potato Salad Recipe
Ingredients
| Potatoes | 3 Pound | |
| Water | ||
| Salt | To Taste | |
| Oil vinegar | 1/2 Cup (16 tbs) | |
| 3/4 cup finely chopped seeded peeled cucumber | ||
| 3 shallots or green onions, finely chopped (green part and all) | ||
| Mayonnaise | 1 Cup (16 tbs) | |
| Celery seed | 1 Teaspoon | |
| Lemon juice | 3 Tablespoon | |
| Basil | 3 Tablespoon, chopped | |
| Ground black pepper | To Taste | |
Directions
Wash potatoes and place them in a small kettle or saucepan.
Add water to cover and salt and simmer until done, 20 minutes or longer depending on size.
Drain and peel the warm potatoes and slice into a mixing bowl.
Pour oil and vinegar dressing over them, and chill.
Before serving add remaining ingredients and toss lightly; garnish with hard-cooked eggs and parsley, if desired.
