Ingredients

 
1 red pepper, cut into 1 inch pieces
 
1 green pepper, cut into 1 inch pieces
 
2 c eggplant, cut into 1/2 inch pieces
 
1/2 c onion, cut into 1 inch pieces clove garlic, finely minced tomato, chopped
 
8 oz. fettuccini noodles, cooked
 
1 T roasted garlic flavored oil
 
2 T balsamic vinegar
 
1 T Italian seasoning
 
1 T fresh parsley, minced
 
1/2 T salt
 
1/2 T dried rosemary
 
1 T coarsely ground black pepper nonfat cooking spray

Directions

Coat the grill with cooking spray and preheat for 5 minutes.
Place the peppers, eggplant, onion and garlic in the grill and cook for 6-8 minutes.
In a large serving bowl, combine the grilled vegetables, chopped tomato and fettuccini noodles.
Mix together the oil, vinegar, Italian seasoning, parsley, salt, rosemary and black pepper to make the salad dressing.
Pour the dressing over the salad and toss gently to blend the flavors.
