Garden Raisin Relish Recipe
Ingredients
| 1/4 cup garlic-flavored wine vinegar | ||
| 1/4 cup lightly packed brown sugar | ||
| Cornstarch | 1 Tablespoon | |
| Seasoned salt | 1 Teaspoon | |
| 1/2 cup dark seedless raisins | ||
| 2 tablespoons snipped fresh mint, or 1/2 tablespoon dried mint | ||
| 1 cup diced firm ripe tomato | ||
| 1/2 cup chopped firm cucumber | ||
| Green onion | 1/4 Cup (16 tbs), chopped | |
| Dill pickle | 1/4 Cup (16 tbs), chopped | |
Directions
Blend vinegar into a mixture of the brown sugar, cornstarch, and salt in a heavy saucepan.
Stir in the raisins.
Cook and stir over medium heat until mixture comes to boiling; cook about 3 minutes longer.
Cool completely.
When ready to serve, mix in mint and remaining chilled ingredients.
Relish should stay fresh 2 to 3 days if covered and stored in the refrigerator
