Garden Chicory & Onion Salad Recipe
Ingredients
1 large bunch chicory
1 small red onion peeled and cut into rings
6 tablespoons corn oil
6 tablespoons fresh lemon juice
1/2 teaspoon salt
1/8 teaspoon pepper
2 tablespoons snipped fresh tarragon or 1 tablespoon dried tarragon
1 orange peeled and sliced
Additional freshly ground pepper
Directions
Wash chicory, drain thoroughly, and tear into bite-size pieces.
Combine with onion rings in a bowl.
Chill well.
Mix together oil, lemon juiced salt, 1/8 teaspoon pepper and tarragon; beat until blended.
Add orange slices and dressing to salad; toss.
Grind pepper over salad just before serving.
