Garden Vegetable Pockets Recipe
Ingredients
| Lettuce | 2 Cup (16 tbs), lightly packed | |
| Carrots | 1 Cup (16 tbs), shredded | |
| 1 cup 4 oz. shredded jack cheese | ||
| 1/3 cup chopped green onions including tops | ||
| 1 tomato, seeded and diced | ||
| 1 avocado, pitted, peeled, and diced | ||
| Mayonnaise | 1/4 Cup (16 tbs) | |
| 3 tablespoons tomato-based chili sauce | ||
| Sweet pickle relish | 1 Tablespoon | |
| 3 pita breads each about 6 inches in diameter, halved | ||
Directions
In a bowl, combine lettuce, carrots, cheese, onions, tomato, and avocado.
In a cup, stir together mayonnaise, chili sauce, and relish; pour over vegetables and toss gently to blend.
Fill bread halves evenly with vegetable mixture, packing gently.
