Garden Fresh Yellow Wax Bean Soup Yi Recipe
Ingredients
2 c. (cut up) fresh yellow string beans
1/4 c. (cut up) fresh green beans
1/4 c. thinly sliced tiny carrots.
1/4 c. finely cut celery and leaves
2 chopped green onions
1 or 2 chopped leeks (optional)
1 c. water
1 tsp. salt
Add
1/4 c. finely chopped parsley
1/4 tsp. pepper
Dash of tabasco
1/8 tsp. thyme
Pinch of savoury
1 tsp. Worcestershire sauce
1-1 1/2 tsp. salt
Directions
1. Cook the above until just tender €” about 10 minutes.
2. In the meantime, in a large saucepan melt 4 tbsp. butter
3. Add 4 tbsp. flour and brown slightly
4. Slowly add 4 c. milk, stirring until thick
5. Add simmered vegetables and juices.
6. Then add 1/4 c. finely chopped parsley, 1/4 tsp. pepper, dash of tabasco, 1/8 tsp. thyme, pinch of savoury, 1 tsp. Worcestershire sauce, 1-1 1/2 tsp. salt
