Ingredients
1 tbsp butter or margarine
1 onion, chopped
2 garlic cloves, chopped
4 celery stalks, minced
2 tomatoes, minced
2 tbsp tomato paste
19 oz canned garbanzo beans, mashed
1 egg, beaten
1/2 cup whole wheat bread crumbs
1/4 cup fresh parsley, finely chopped
1 tsp dried thyme
1 tsp dried savory
Salt and pepper
Directions
Preheat oven to 375 °F (190 °C).
In a skillet, melt butter or margarine.
Cook onion, garlic and celery until tender.
Add tomatoes and tomato paste.
Continue cooking 5 minutes.
In a large bowl, pour hot mixture.
Add garbanzo beans, egg, bread crumbs and mixed herbs.
Season with salt and pepper, mixing well.
Pour into a greased loaf pan.
Cover with aluminum foil.
Bake in oven 1 hour or so.
Let stand a few minutes before unmolding.
