 Garbanzos2 Can (10oz) (Salad-style Spanish olives with pimiento - 1 jar (5 to 6 ounce) or 1 cup, or 1 jar (5 ounce) pimiento-stuffed Spanish olives)
 Onion and celery - 1/2 cup each, chopped
 Garlic2 Clove (5gm) (Salad-style Spanish olives with pimiento - 1 jar (5 to 6 ounce) or 1 cup, or 1 jar (5 ounce) pimiento-stuffed Spanish olives)
 Parsley1 Tablespoon, chopped (Salad-style Spanish olives with pimiento - 1 jar (5 to 6 ounce) or 1 cup, or 1 jar (5 ounce) pimiento-stuffed Spanish olives)
 Lemon peel1/2 Teaspoon, grated (Salad-style Spanish olives with pimiento - 1 jar (5 to 6 ounce) or 1 cup, or 1 jar (5 ounce) pimiento-stuffed Spanish olives)
 Lemon juice3 Tablespoon (Salad-style Spanish olives with pimiento - 1 jar (5 to 6 ounce) or 1 cup, or 1 jar (5 ounce) pimiento-stuffed Spanish olives)
 Cayenne pepper1/8 Teaspoon (Salad-style Spanish olives with pimiento - 1 jar (5 to 6 ounce) or 1 cup, or 1 jar (5 ounce) pimiento-stuffed Spanish olives)
 Olive oil or salad oil - 1/3 cup
 Iceberg lettuce leaves or romaine leaves
 Cherry tomatoes - 1 cup, halved, or 2 large tomatoes, peeled and cut in wedges

Directions

MAKING
1. Wash and clean olives in a wire strainer and drain thoroughly.
2. Slice olives and keep in a bowl.
3. Drain garbanzos.
4. Add garbanzos to olives. Add onion, celery, garlic, parsley, lemon peel, lemon juice, and cayenne.
5. Drizzle oil over it and mix lightly until well coated.
6. Arrange lettuce leaves in salad bowl.
7. Transfer salad on the leaves.

SERVING
8. Garnish with tomatoes and serve immediately.
