Gao-Li-Xiang-Jiao (Frosty Bananas) Recipe

Ingredients
4 bananas
2 egg whites
2 tbsps. sugar
2 tbsps. flour
4 tbsps. water
6 tbsps. cornflour
6 tbsps. icing sugar
1 1/2 cup peanut oil
Directions
Beat egg whites in a bowl until stiff.
Sift cornflour and flour in a bowl, add water, mix well, add egg whites, beat lightly, make a smooth batter.
Peal bananas and cut into 2" length, then in half, lengthwise and sprinkle 2 tablespoons sugar.
Heat oil in a pan, dip each piece of banana in batter, coat well, drop into hot oil, few at a time, lower heat, cook until fluffy and colour turns golden, turning lightly.
Remove and place on a kitchen paper and sprinkle icing sugar while hot.
Serve at once
