 Shrimp2 Pound, peeled
 Water4 Quart
 White onions6 , chopped
 Flour2 Tablespoon
 Shortening2 Tablespoon
 Green onions8 , chopped
 Bell peppers2 To taste, chopped
 Bay leaves3 , crushed
 Celery2 Cup (16 tbs), chopped
 Tomatoes2 Pound, peeled
 Crab meat2 Pound
 1 1/2 cups raw ham, cut in chunks
 Oysters3 Dozen
 Thyme1 Teaspoon
 Salt2 Teaspoon
 Pepper1/2 Teaspoon
 3 cups cut okra
 2 tablespoons gumbo file
 Rice4 Cup (16 tbs)
 Parsley1/2 Cup (16 tbs), chopped

Directions

Boil shrimp in water with 2 onions 15 minutes.
Strain shrimp.
Reserve water.
Brown flour in shortening.
Add remaining 4 white onions, green onions and bell peppers, bay leaves and celery.
Cook 10 minutes.
Add tomatoes and cook for 3 minutes.
Add shrimp water.
Cook 20 minutes.
Add crab meat, ham, oysters, cooked shrimp, thyme, salt, pepper and okra.
Cook 20 minutes.
Add gumbo file at the last minute.
Stir.
Turn off heat.
Serve with boiled rice mixed with the parsley.
Serves 16 to 20.
