Ingredients

 6 pounds rump of beef
 Butter4 Tablespoon, melted
 Canned tomatoes8 Cup (16 tbs)
 Onions8 Medium, sliced
 Carrots6 , sliced
 Celery stalks2
 Red wine5 Cup (16 tbs)
 Garlic4 Clove (5gm), halved
 Whole black peppercorns1 Teaspoon
 Thyme1/4 Teaspoon
 Bay leaves2
 Salt To Taste
 Beef broth1 1/4 Quart

Directions

Brown meat on all sides in melted butter in skillet.
Transfer meat to a rack in covered roaster or Dutch oven.
Add tomatoes, onions, carrots, celery, wine and seasonings.
Add broth to cover meat.
Roast at 3500 for about 2 1/2 hours, until meat is tender.
Remove meat to a hot platter and strain broth.
Serve broth hot with meat.
Serves 16 to 18.
