Galician Steamed Fish In Tomato Sauce Recipe
Ingredients
| 2 pounds whitefish fillets | ||
| Onion | 1 Small, quartered | |
| Bay Leaf | 1 | |
| Olive oil | 2 Tablespoon | |
| Garlic | 1 Clove (5gm), minced | |
| Onion | 1/2 Cup (16 tbs), chopped | |
| 6 medium tomatoes, peeled, seeded, chopped | ||
| Paprika | 1 Teaspoon | |
| Dash of cayenne | ||
| Chives | 1 Teaspoon, chopped | |
| White wine | 1/3 Cup (16 tbs) | |
| Vinegar | ||
Directions
Place fish, quartered onion, and bay leaf on large piece of aluminum foil.
Securely close foil.
Place fish in steamer; steam 25 minutes or until fish flakes easily.
Heat oil in deep skillet.
Add garlic and chopped onion; saute until tender.
Add tomatoes, paprika, cayenne, chives, and wine.
Simmer 30 minutes.
Place fish on serving platter; top with tomato sauce.
