Ingredients

 1 cup cup canned beets, drained and diced
 1 3 oz package lemon flavored gelatin
 Boiling water1 Cup (16 tbs)
 3/4 cup beet juice
 Vinegar3 Tablespoon
 Salt1/2 Teaspoon
 Onion2 Teaspoon, grated
 Prepared horseradish1 Tablespoon
 Celery3/4 Cup (16 tbs), diced

Directions

Dissolve gelatin in boiling water.
Add beet juice, vinegar, salt, onion, gelatin and horseradish.
Chill until gelatin thickens.
Fold in beets and celery.
Drain beets and reserve juice.
Pour into a festive mold such as one of the Mexican star, diamond, or crown and points molds.
