Ingredients

 Carrots2 Cup (16 tbs), grated
 Skimmed milk2 Cup (16 tbs)
 Sugar4 Tablespoon
 Sultanas2 Tablespoon
 Clarified butter1 Tablespoon
 Vanilla essence1 Teaspoon
 A good pinch of crushed cardamoms
 2 tbsp blanched and thinly sliced pistachios and almonds

Directions

Microwave carrots, milk, sugar and kismis in a large deep bowl for 3 minutes.
Then stir and microwave on medium 50% power for 40 minutes stirring several times in between until the milk dries up.
Stir in ghee and microwave again for 5 minutes, stirring in between.
Cool and mix in vanilla essence, cardamoms and 1 tbsp of the nuts.
Sprinkle the remaining nuts on top.
