Ingredients
| Carrots | 2 Cup (32 tbs), grated | |
| Sugar | 2 Cup (32 tbs) | |
| Garlic | 2 Clove (10 gm), chopped | |
| Garam masala | 1 Teaspoon | |
| Cardamom powder | 1 Pinch (Elaichi Powder) | |
| Nutmeg powder | 1 Pinch (Jaiphal Powder) | |
| Chili powder | 2 Teaspoon | |
| Turmeric powder | 1⁄4 Teaspoon (Haldi) | |
| Vinegar | To Taste | |
| Seedless raisins | 1⁄4 Cup (4 tbs), soaked in vinegar overnight | |
| Salt | To Taste |

Directions
1 In a heavy based pan, add the grated carrots.
2 Add the sugar and 1 cup of vinegar.
3 Cook over a low heat while stirring continuously.
4 Add the garlic and cook till the carrots soften.
5 When the carrots are soft, add in the soaked raisins and bring to a boil.
6 When the sauce thickens, add the powdered spices.
7 Stir the mixture well.
8 Taste for sugar as well as salt.
9 The pickle should be more sweet than sour.
10 Remove from heat and cool.
11 Transfer to sterilized containers and store in refrigerator.
