 Custard powder1 Tablespoon (dissolved in Milk)
 Cardamom powder1 Tablespoon
 Nutmeg powder1⁄2 Tablespoon
 Toasted almonds1⁄8 Cup (2 tbs)
 Pistachios1⁄8 Cup (2 tbs)
 Golden raisins1⁄4 Cup (4 tbs)
 Ghee1 Tablespoon (clarified butter)

Directions

Shred the carrots and set aside.
In a deep pan, heat the ghee. Add the cardamom powder and the carrots, stir for around 5 minutes. Now add the milk and sugar. Bring to a boil. Add the custard powder that has been dissolved in milk along with the nutmeg powder. Simmer on low heat till the carrots are soft and the milk has thickened to the consistency you like. Garnish with toasted almonds and pistachios and raisins. Chill in the refrigerator before serving. Best Served Cold...

I tried this recipe exactly the way Trupti has directed and it turned out absolutely delicious. Rated 5+ for sure. I know that Carrot and milk are great from health, just keep the sugar low and you are talking about a health to avergae food instead of party food.
