Gai Phrik Khao Phat Recipe

This is a great quick and very tasty recipe for leftover brown rice. It is important that the rice is throughly chilled and not mushy or too moist. You need the rice kernels to be separate. It can be served as a complete one plate meal, or qs a side dish in a complete Thai meal.

Recipe Story

I first learned to make Thai Fried rice about 20 years ago in a Thai Cooking class given by long time friend and award winning athor, Kasma Loha-unchit. Since then I have traveled to Thailand 30+ times often for holidays and have learned many recipes from home cooks, top 5 star chefs and street vendors.

Ingredients

 Brown rice4 Cup (64 tbs)
 Boneless chicken breast4 Ounce
 Chicken sausage link1 , cut into 1/3" slices and browned
 Vegetable oil2 Teaspoon
 Garlic2 Tablespoon, chopped
 Yellow bell peppers1 Cup (16 tbs)
 Red onion1⁄2 Cup (8 tbs)
 Oyster sauce3 Tablespoon
 Thai chiles5 (phrik chee fa)
 Fish sauce3 Drop
 Pepper white To Taste
 Pepper white To Taste
 Thai basil2 Cup (32 tbs)

Directions

Heat a well seasoned pan (wok is best)
Add the oil and heat until hot, add the raw chicken stir fry, (if using left over grilld chicken cut it into stips and sit aside)
Brown sliced sausage
Add the onions and bell peppers, fry
Add the garlic and chopped chilies when chicken is still pink
Add the Oyster Sauce,
Add the rice (make sure all big chunks are broken up)
Stir fry
Add the egg pieces
Add the fish sauce
Taste and adjust oyster sauce and or fish sauce if needed
Add Thai Basil leaves, and stir fry until leaves are wilted

Garnish with Basil leaves and sliced cucumber if desired

Allow about 1 1/2 cups of rice per person for a main course. This is so easy and tasty.

I like the smokiness of ground roasted chiles in this dish, and sometimes I add this as I stir fry. Roasted Thai chiles can be found in most Thai makets.

I sometimes make my own Thai Sausage, but have found using a sausage like Chicken Sausage (sun dried tomato) by Han's All Natural, to be a great and easy way to zap up the flavour of fried rice. This sausage is msg free, hormone and nitite and nitrates free. Each link only contains 6 grams of fat and it is BIG on flavour!

I recently tried making this badic Thai Fried Rice using left over brown rice and is it not only healthy but awesome in the taste and texture department.

I made this recipe and it is not only easy and fast to make, the flavor is fantastic. I had friends over for a Thai dinner and served this and it was a huge hit - it is also very easy to control the amount of heat by simply varying the amount of Thai chilis used (and don't cheat and use Jalapenos - they don't taste the same). This also reheats super-easy in the microwave for lunch the next day!
