Fusilli with Checca Sauce Recipe Video
Ingredients
* ½ lb of fusilli noodles ( 4 cups uncooked)
* 1 pint of grape tomatoes or cherry tomatoes
* ½ lb fresh mozzarella (1 ½ cup- 2 cups)
* 1 clove of garlic (finely chopped)
* 1 teaspoon of pepper
* 1 ½ teaspoon of salt
* ¼ cup of extra virgin olive oil
* ¼ cup fresh chopped basil
* * for a spicy kick, just sprinkle in crushed red pepper flakes.
Directions
In a medium saucepan bring about 6-8 cups of water to a boil. Add in a pinch of salt to your water, then once the water is at a boil add the fusilli. Cooked the noodles for about ten minutes or until al dente. Make sure then noodles are cooked throughout.
In a medium mixing bowl add the tomatoes, mozzarella, chopped garlic, salt, pepper and olive oil. Give all the ingredients a big toss and set aside until the noodles are ready.
Once the noodles are done drain the water and place in the mixing bowl. Gently toss the noodle with the tomato mixture.
Cut the fresh basil and add to the mixing bowl with all the ingredients. Gently give another toss and serve! This meal is to be served warm. Enjoy!
