Funnel Cakes Recipe
Ingredients
3 eggs
2 cups milk
1/4 cup sugar
3 to 4 cups flour
1/2 teaspoon salt
3/4 teaspoon baking soda
1 teaspoon baking powder
Directions
Beat eggs and add sugar and milk.
Sift 2 cups of the flour with the baking powder, salt and soda and add to milk and egg mixture.
Beat this batter until smooth and add only as much flour as needed.
Batter must be thin enough to run through a funnel.
Pour batter into a small pitcher.
Put your finger over the spout of the funnel and pour about three tablespoons of batter into the funnel.
Remove finger from spout and let batter drop into deep fat at 375 degrees.
You can make funnel cakes any shape you desire by swirling and criss-crossing as you control funnel spout with your finger.
Most cooks prefer to make swirls by starting at center and swirling batter outward.
Serve with jam, jelly or sprinkle with powdered sugar.
