Fundy Baked Beans Recipe
Ingredients
| Beans | 2 Cup (16 tbs), dried | |
| Cold water | 1 1/2 Quart | |
| Salt | 1 Teaspoon | |
| Onion | 1 Medium | |
| Salt pork | 1/4 Pound, sliced | |
| Dry mustard | 1 Teaspoon | |
| 1/2 cup molasses or 1/4 cup molasses and 1/3 cup brown sugar | ||
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Rinse beans; cover with cold water and soak overnight.
Next morning, add 1 teaspoon salt to beans and soaking water; cover, simmer about 1 hour.
Drain, reserving 3 cups bean liquid.
Put the onion and salt pork into bean pot.
Add beans, salt and pepper to taste, dry mustard, molasses, and reserved bean liquid to cover; mix well.
Cover.
Bake at 300°F about 3 hours.
Add liquid as needed.
Remove cover for last 25 minutes.
