Fukien Chop Suey Recipe
How is it that you still haven't tried my recipe for Fukien Chop Suey. This Chinese recipe of Fukien Chop Suey is enjoyed the world over. This Fukien Chop Suey is never going to fail as a Main Dish. This Fukien Chop Suey is too good to be missed.
Ingredients
1pkt. egg noodles or 1/2 kg. home made noodles
2 chicken breasts, boiled and shredded
2 medium onions, quartered
2 carrots, quartered
2 capsicums, deseeded and quartered
2 Chinese mushrooms, soaked in hot water - 30 minutes
2 tbsps. cornflour
1 egg beaten
1 tsp. salt
1/2 cup bean sprouts
2 tbsps. bamboo shoots, minced
1 1/2 cups red sauce
1 cup peanut oil
Directions
Cook noodles as described for Hunan Vegetable Chop Suey.
Heat half oil in a pan, saute onions 2 minutes add vegetables, saute for 5 minutes more and remove.
Place chicken pieces in a bowl, add beaten egg, sprinkle cornflour, salt, mix well and coat chicken pieces with it.
Heat remaining oil and fry all chicken pieces until light golden.
Add sauted vegetables.
Fry well for 3 minutes and pour in Chinese red sauce.
Stir well and simmer for 6 minutes.
Remove.
Arrange the Chop Suey as described for Hunan Vegetable Chop Suey.
VEGETARIAN VERSION:
Omit chicken breasts.
Instead use boiled and shredded soya nuggets or vegetarian chicken and follow the recipe as directed above
