Fudge Nut Muffins Recipe
These fudgey nut muffins taste like a delicious cross between a brownie and a fudge cake. The chooped walnuts add to the crunchiness of the muffins. The chocolate and the vanilla really flavores these fudgey nut muffins in an unforgettable way! A favorite of mine, this recipe is a real comfort snack.
Ingredients
| All purpose flour | 1 Cup (16 tbs) | |
| Granulated Sugar | 11/3 Cup (16 tbs) | |
| 11/4 tsp baking powder 6mL | ||
| 1/2 tsp salt 2mL | ||
| 1/4 tsp baking soda lmL | ||
| L cup milk 250 mL | ||
| 3 tbsp butter or shortening,melted 45 mL | ||
| Egg | 1 | |
| 1/2 tsp vanilla 2mL | ||
| Unsweetened chocolate square | 3 , cooled | |
| Chocolate Chips package | 1 | |
| Walnuts | 1/2 Cup (16 tbs), chopped | |
Directions
In a large bowl, combine flour, sugar, baking powder, salt and baking soda.
Make a well in the center.
Add milk, butter, egg, vanilla and melted chocolate; stir just until moistened and blended.
Fold in the chocolate chips and walnuts.
Spoon batter into prepared muffin tin, filling cups three-quarters full or to the top if a larger muffin is desired.
Bake in preheated oven for 20 to 25 minutes or until toothpick inserted in center of a muffin comes out clean and dry.

Prepare the batter as directed on the package.
Use flat-bottomed ice cream cones.
Fill one-quarter full with the batter.
Bake at 375° F (190° C.) for 20 minutes or until done.
Frost and decorate with chocolote chips, miniature marshmallows, candy, raisins or whatever you happen to have on hand.
