Fudge Muffins Recipe

Sweet and chocolately fudgey muffins or fudgey cuffins are perfect treats for little children. Baked with chocolate milk and brown suagr, they also have the added flavor of vanilla. Pop them in the oven for any children's party and watch them dissapear with requests for more!

Ingredients

 Packed brown sugar2/3 Cup (16 tbs)
 Milk1/3 Cup (16 tbs)

 1 tsp vanilla 5mL
 Eggs2
 All purpose flour11/3 Cup (16 tbs)
 1 tsp baking soda 5mL
 1/2 tsp salt 2mL
 Milk1/2 Cup (16 tbs)

Directions

In a saucepan over very low heat, combine 2/3 cup (150 mL) brown sugar, 1/3 cup (75 mL) milk and chocolate, stirring until chocolate melts.
Set aside to cool.
In a large bowl, cream together shortening and 2/3 cup (150 mL) brown sugar until light and fluffy.
Add vanilla and eggs, one at a time.
Beat well after each addition.
In another bowl, combine flour, baking soda and salt.
Add to creamed mixture alternately with 1/2 cup (125 mL) milk, beating after each addition.
Add chocolate mixture.
Spoon batter into prepared muffin tin, filling cups three-quarters full.
Bake in preheated oven for about 20 minutes.
