Ingredients

 
1/2 cup butter
 
3 oz. baking chocolate
 
1/2 cup granulated sugar
 
2 cup flour
 
Dash salt
 
8 eggs lightly beaten
 
1 tsp vanilla extract

Directions

Melt butter with chocolate in top of double boiler over warm water.
In large mixing bowl combine sugar replacement, flour and salt; stir in melted chocolate mixture.
Add eggs and vanilla extract.
Stir just until moistened and blended.
Spoon batter into muffin pans lined with paper muffin cups.
Bake muffins at 300°F (150°C) for 35 minutes or until muffins test done.
