Directions

Wash and tear spinach leaves from stems. Tear large leaves into pieces and pack down in cup to measure.
Pat with paper towels to remove excess moisture.
Coarsely chop nectarines to yield 1 cup.
Combine spinach, nectarines and onions in a bowl or plastic bag.
Cut bacon into 1/2-inch pieces and fry until crisp in large skillet.
Drain crisp bits and add to spinach combination.
Pour all but 2 tablespoons of bacon drippings from pan.
Add to remaining drippings, vinegar, salt and brown sugar.
Heat just to simmering.
Remove from heat and add spinach combination; toss well.
Serve at once while slightly warm.
