Fruity Crown Roast Lamb Recipe

Ingredients

 Lamb chops10 (1 Crown Roast Of Lamb)
 Butter1 Tablespoon
 Onion1 Small, finely chopped
 Apple1 , peeled, cored and finely chopped
 Whole meal breadcrumbs1⁄2 Cup (8 tbs)
 Seedless prunes1 Cup (16 tbs), chopped
 Walnuts1⁄4 Cup (4 tbs), chopped
 Chopped parsley1 Tablespoon
 Salt To Taste
 Pepper To Taste

Directions

1.
Place butter and onion in a Pyrex bowl.
Cook for 1 minute on HIGH.

Add apple, cook for further 1 minute on HIGH.
3.
Stir in breadcrumbs, prunes, walnuts and parsley.
Season with salt and pepper.
4.
Fill centre cavity of crown roast with seasoning.
Shield edges of chops with foil to prevent charring.
5.
Place on a rack.
Cook for 18-20 minutes on MEDIUM (for medium) or 22-25 minutes (for well done).
