Fruity Tomato Relish Recipe
Ingredients
| Ripe tomatoes | 3 Pound, cut into wedges | |
| 3 pounds ripe pears, pared, cored, and cubed | ||
| 2 large onions, coarsely chopped | ||
| 2 large green peppers, seeded and coarsely chopped | ||
| 2 large sweet red peppers, seeded and coarsely chopped | ||
| Raisins | 1 Cup (16 tbs) | |
| Brown sugar | 1 Cup (16 tbs) | |
| Light corn syrup | 1 1/2 Cup (16 tbs) | |
| Cider vinegar | 1 1/2 Cup (16 tbs) | |
| Salt | 1 1/2 Teaspoon | |
| Dry mustard | 1 Teaspoon | |
| Ground ginger | 1 Teaspoon | |
| Crystallized ginger | 1/4 Cup (16 tbs), diced | |
| Ground cloves | 1/4 Teaspoon | |
| Red pepper flakes | 1/4 Teaspoon, crushed | |
Directions
1. Put tomatoes, pears, onions, peppers, and raisins in a large stainless steel or enamel pan. Stir in the sugar, corn syrup, vinegar, salt, mustard, ginger, cloves, and red pepper flakes. Bring to a boil and boil, uncovered, for about 1 hour, or until thick, stirring occasionally.
2. Ladle the relish into hot clean canning jars. Seal and process in a boiling water bath for 10 minutes. Cool. Check the seals and store in a cool dry place.
