Ingredients

 Ripe tomatoes3 Pound, cut into wedges
 3 pounds ripe pears, pared, cored, and cubed
 2 large onions, coarsely chopped
 2 large green peppers, seeded and coarsely chopped
 2 large sweet red peppers, seeded and coarsely chopped
 Raisins1 Cup (16 tbs)
 Brown sugar1 Cup (16 tbs)
 Light corn syrup1 1/2 Cup (16 tbs)
 Cider vinegar1 1/2 Cup (16 tbs)
 Salt1 1/2 Teaspoon
 Dry mustard1 Teaspoon
 Ground ginger1 Teaspoon
 Crystallized ginger1/4 Cup (16 tbs), diced
 Ground cloves1/4 Teaspoon
 Red pepper flakes1/4 Teaspoon, crushed

Directions

1. Put tomatoes, pears, onions, peppers, and raisins in a large stainless steel or enamel pan. Stir in the sugar, corn syrup, vinegar, salt, mustard, ginger, cloves, and red pepper flakes. Bring to a boil and boil, uncovered, for about 1 hour, or until thick, stirring occasionally.
2. Ladle the relish into hot clean canning jars. Seal and process in a boiling water bath for 10 minutes. Cool. Check the seals and store in a cool dry place.
