Fruity Griddle Cakes Recipe
Ingredients
| Eggs | 2 , separated | |
| Flour | 3/4 Cup (16 tbs) | |
| Baking powder | 2 Teaspoon | |
| Sugar | 2 Tablespoon | |
| Milk | 2/3 Cup (16 tbs) | |
| Melted butter | 1 Tablespoon | |
| 2 apples or 2 bananas | ||
| Warmed honey, maple syrup or lemon juice | ||
Directions
For a quick and easy last-minute pudding Griddle Cakes are winners and handy for boating and sailing holidays.
You can use a thick frying pan if you have no griddle.
Beat the egg whites until stiff.
Sift the flour, baking powder and 1 tablespoon sugar into a bowl.
Beat the egg yolks lightly and mix in with the milk and melted butter.
Peel and coarsely grate the apples, discarding the core; or peel and chop bananas.
Fold the fruit into the batter and then the beaten egg whites.
Heat the griddle or frying pan and grease lightly.
It is hot enough when a drop of water spits and splutters.
Drop the batter on the hot griddle in tablespoons, allowing room for spreading.
In a minute or two, when puffed and bubbly, flip over and brown the other side.
Sprinkle with remaining sugar and serve with warmed honey, maple syrup or fresh lemon juice.
