Ingredients

 75 g / 3 oz / 2/3 cup mixed dried fruit
 150 ml / 1/4 pint / 2/3 cup apple juice
 115 g / 4 oz stale brown or white bread, diced
 5 ml / 1 tsp mixed spice
 Banana1 Large, sliced
 150 ml / 1/4 pint / 2/3 cup skimmed milk
 15 ml / 1 tbsp demerara sugar
 Natural low fat yogurt, to serve

Directions

1. Preheat the oven to 200°C/400°F/ Gas 6. Place the dried fruit in a small pan with the apple juice and bring to the boil.
2. Remove the pan from the heat and stir in the bread, spice and banana Spoon the mixture into a shallow 1.2 litre / 2 pint / 5 cup ovenproof dish and pour over the milk.
3. Sprinkle with demerara sugar and bake for 25-30 minutes, until firm and golden brown. Serve hot or cold with natural yogurt.
