Fruited Shrimp Salad Recipe

Ingredients
3 cups water
1 pound unpeeled large fresh shrimp
2 (8-ounce) cans unsweetened pineapple tidbits, drained
1 (11-ounce) can mandarin oranges in extra light syrup, drained
1/2 cup chopped celery
3 tablespoons reduced-calorie mayonnaise
1 1/2 teaspoons lemon juice
Bibb lettuce leaves (optional)
Directions
Bring water to a boil, add shrimp, and cook 3 to 5 minutes.
Drain well, rinse with cold water.
Chill.
Peel and devein shrimp.
Combine shrimp, pineapple, mandarin oranges, celery, mayonnaise, and lemon juice, tossing gently, chill.
Serve on lettuce leaves, if desired.
