Ingredients
1 envelope unflavored gelatin
1 cup white grape juice (from a 24 ounce bottle)
1 cup red grape juice (from a 24-ounce bottle)
1 package (10 ounces) quick-thaw frozen mixed fruits
1 package (3 ounces) lemon-flavor gelatin
1 cup ice cubes
2 egg whites
Red food coloring
Directions
Sprinkle unflavored gelatin into 1/4 cup white grape juice in a small saucepan; let stand for 5 minutes to soften.
Heat gently, stirring constantly, until gelatin dissolves.
Stir in remaining 3/4 cup white grape juice and frozen mixed fruits until fruits thaw; spoon into a 5 cup ring mold.
Combine lemon gelatin and 1/2 cup red grape juice in a medium-size saucepan; stir over low heat until gelatin dissolves.
Remove from heat; stir in remaining 1/2 cup red grape juice and ice cubes until the cubes have been completely dissolved; add the egg whites.
Place saucepan in a pan of ice and water.
Beat with electric mixer at high speed until mixture thickens and doubles in volume; tint a pale pink with a few drops red food coloring; spoon over fruit layer in ring mold.
Chill for 6 hours, or overnight.
To unmold: Loosen mold around edges with a knife; dip mold very quickly in and out of a pan of hot water; shake mold gently to loosen; cover with serving plate; turn upside down; lift off mold.
Garnish with clusters of grapes, if you wish.
