Fruited Stuffed Cornish Game Hens Recipe

 Cooked rice1 1/2 Cup (16 tbs)
 Orange peel2 Teaspoon, grated
 1/2 teaspoon poultry seasoning or sage
 Almonds1/4 Cup (16 tbs), sliced
 1/4 cup frozen orange juice concentrate
 Honey1/4 Cup (16 tbs)
 1 1/2 teaspoon instant beef bouillon granules
 2 Cornish hens

Directions

1. Combine rice, orange peel, poultry seasoning and sliced almonds in medium mixing bowl. Stuff each Cornish hen with 1/2 of mixture. Place hens on roasting rack
2. In a 2-cup glass measuring cup, combine orange juice concentrate, honey, and bouillon. Microwave at Time Cook (power level 10) for about 1 1/2 minutes, or until warm. Brush birds with mixture. Microwave at Time Cook (power level 10) for 20 to 25 minutes, or until meat near bone is no longer pink, rearranging hens once and brushing with orange juice mixture one or two times.Let stand 5 minutes before serving.
