Fruited Sausage Puffs Recipe

Ingredients
1 pound link sausage
2 cans (1 pound each) yams, drained
1/4 cup melted butter
2 cups canned apple sauce
3 egg yolks
1 can (13 1/2 ounces) pineapple tidbits, drained
1 teaspoon grated lemon rind
1/2 teaspoon nutmeg
1/3 cup maple syrup
3 egg whites, stiffly beaten
1/3 cup sliced blanched almonds
Directions
Cook sausages until lightly browned.
Drain and reserve.
Mash yams and beat in butter, apple sauce, and egg yolks, mixing until well blended.
Fold in pineapple, lemon rind, nutmeg and maple syrup.
Fold in egg whites and pile mixture lightly into a buttered 1 1/2 quart casserole.
Place sausages on top of casserole to form spokes.
Bake in a 350° F.oven 25 to 30 minutes or until potatoes are lightly browned.
Sprinkle with almonds 5 minutes before removing from oven.
