 Long grain rice package1
 Water1/2 Cup (16 tbs)
 Butter/Margarine1 Tablespoon
 Oranges2 Medium
 1 cup mayonnaise or mayonnaise-style salad dressing
 Celery1 Cup (16 tbs), sliced
 Pecans1/2 Cup (16 tbs), chopped
 Orange juice1 /3 Cup (16 tbs)
 Sugar1 Teaspoon
 Seedless green grapes1/2 Pound, halved
 6 cantaloupe or honeydew melon rings
 Crisp salad greens

Directions

Cook contents of rice and seasoning packets with water and butter or margarine according to package directions.
Chill.
Wash oranges and grate 2 teaspoons of the orange peel; reserve.
Peel oranges and remove white membrane.
Dice oranges and set aside.
Mix together rice, mayonnaise or salad dressing, celery, pecans, orange juice, orange peel and sugar.
Chill well.
Just before serving, add diced oranges and grapes.
Mix well.
