Fruited Rice Ring For Curry Recipe
Ingredients
1/2 cup orange marmalade
1/4 cup seedless or seeded raisins
Salt to taste
4 cups cooked brown or white rice, cooled
Directions
Using a fork, fold marmalade and raisins into the rice (be careful not to mash rice grains).
Add salt if necessary.
Pack firmly into a well-greased 1-quart ring mold.
Set mold in a shallow pan of hot water and bake in a 350° oven just long enough to heat thoroughly.
Unmold.
