Fruited Parfait Salad Recipe
The fruited parfait salad is a mixed fruit and cottage cheese salad. Prepared with added sour cream to taste, the fruited parfait salad has melon balls in it and is chilled to serve.
Ingredients
1 16-ounce package frozen sliced strawberries
1 10 ounce package frozen melonballs or 1 cup fresh melon balls
1 10-ounce package frozen blueberries or 1 cup fresh blueberries
1 cup dairy sour cream
1/2 teaspoon grated lemon peel
1 16-ounce carton large curd cream-style cottage cheese
Directions
Partially thaw and drain frozen fruits separately, reserving 1/4 cup strawberry syrup.
Prepare dressing by blending together sour cream, reserved syrup, and lemon peel.
Allowing 1/3 cup cottage cheese for each salad, begin layering with half the cottage cheese in bottoms of 6 large parfait glasses.
Continue layering with dressing, strawberries, a few melon balls, blueberries, remaining cottage cheese, dressing, and strawberries.
Top with remaining melon balls.
