Fruited Lamb Shanks Recipe

Fruited Lamb Shanks is one dish which you cannot resist making again and again. I never fail to eat Main Dish while dining out and this is the most common dish that I order. I have a weakness for Meat Meatloaf, thus I prepare this recipe often. In my opinion, if one is a chef, one ought to have a personal recipe of Fruited Lamb Shanks, just like I do.

Ingredients

 
Salt and pepper
 
4 lamb shanks
 
Flour
 
1/2 cup currants or raisins
 
1 cup cooked prunes
 
1 cup cooked dried apricots
 
2 tablespoons each cider vinegar, lemon juice, and honey or light corn syrup
 
1/2 cup sugar
 
1/2 teaspoon each cinnamon, allspice
 
1/4 teaspoon ground cloves
 
1 cup water

Directions

Salt and pepper meat and roll in flour; place in a greased casserole or baking pan and cover.
Bake in a moderate oven (350°) for 1 1/2 to 2 hours, or until meat is tender.
Meanwhile combine currants, prunes, apricots, vinegar, lemon juice, honey or syrup, sugar, spices, and water in a saucepan.
Bring to a boil and cook slowly for about 5 minutes.
Drain fat from the meat, pour the fruit sauce over the meat, cover again and bake in a hot oven (400°) for an additional 30 minutes.
Spoon fruit and pan juice over meat to serve.
