Fruited Gelatin Parfaits Recipe
The Fruited Gelatin Parfaits are eaten up as soon as it is taken out of the refrigerator! Sometimes I even have to hide them so that there is some left for my husband. Try preparing this irresistible Fruited Gelatin Parfaits for yourself!
Ingredients
1 3-ounce package lemon-flavored gelatin
1/4 teaspoon salt
1 cup boiling water
3/4 cup cold water
1 10-ounce package frozen mixed fruit
1/2 cup lemon yogurt
2 teaspoons sugar
Directions
Dissolve gelatin and salt in boiling water; add cold water.
Set aside 1/2 cup mixture.
Add frozen fruit to remaining gelatin mixture, stirring carefully to separate fruit.
Chill till partially set, 10 to 15 minutes; spoon into 6 par-fait glasses.
Chill till nearly set.
Meanwhile, chill the reserved 1/2 cup gelatin till partially set.
Beat with rotary or electric beater till light and fluffy, 1 to 2 minutes.
Stir together lemon yogurt and sugar; fold into whipped gelatin.
Spoon mixture atop gelatin in parfait glasses.
Chill till set.
