Fruited Chicken Breasts Recipe
Ingredients
| 6 chicken breast halves, skinned and boned | ||
| 1 tablespoon corn oil margarine | ||
| Cardamom | 1/4 Teaspoon | |
| Salt | 1/4 Teaspoon | |
| Pepper | 1 Dash | |
| 2 1/2 to 3 cups firm baking apples, unpeeled and thinly sliced | ||
| Cider | 1/3 Cup (16 tbs) | |
| Granulated Sugar | 1/4 Cup (16 tbs) | |
| Lemon juice | 1 Tablespoon | |
| 1 1/2 teaspoons grated lemon rind | ||
| Worcestershire sauce | 1 Teaspoon | |
| 1 teaspoon prepared cream-style horseradish (optional) | ||
Directions
Preheat oven to 350 degrees.
In a shallow baking pan arrange chicken.
Dot with margarine.
Sprinkle with cardamom, salt and pepper.
Bake for 1 hour or until tender.
In a medium saucepan combine apples, cider, sugar, lemon juice and rind, Worcestershire sauce and horseradish.
Simmer over medium-low heat until apples are tender.
Pour over chicken.
Bake just until heated through.
