Fruited Chicken Recipe

Ingredients
6 to 8 pieces chicken (breast, legs, thighs)
1/3 cup flour
1 1/2 teaspoons salt
1/2 teaspoon paprika
1 teaspoon curry powder
4 tablespoons salad oil or shortening
1 cup dry white table wine or chicken broth
6 to 8 orange segments
1 cup pitted Bing or Royal Anne cherries
6 to 8 pineapple spears
1 avocado, cut in crescents
Sprigs of mint
Directions
Shake chicken pieces in paper bag with flour, salt, paprika, and curry.
Brown gently on all sides in oil.
Remove to large baking pan or oblong casserole.
Add the wine, cover, and bake in a moderately hot oven (375°) for 20 minutes.
Remove from oven and arrange orange segments, cherries, and pineapple spears over the chicken.
Return to oven and continue baking, uncovered, until chicken is tender, about 20 to 25 minutes longer.
Remove chicken to chop plate or platter; arrange fruit over and around chicken.
Garnish platter with crescents of avocado and sprigs of fresh mint.
