Fruited Cheese Delight Recipe
Ingredients
| Cottage cheese | 11/3 Cup (16 tbs) | |
| 1 teaspoon each honey and lemon juice | ||
| Artificial sweetener to equal 1 teaspoon sugar | ||
| Vanilla extract | 1/8 Teaspoon | |
| Salt | 1 Dash | |
| Unflavored gelatin | 3/4 Teaspoon | |
| 1/3 cup apple juice, no sugar added | ||
| 12 large grapes, cut into halves | ||
| 1/4 cup diced carrot, 1/4 inch cubes | ||
Directions
Combine cheese, honey, lemon juice, sweetener, vanilla, and salt in blender container or work bowl of food processor; process about 2 minutes, occasionally scraping mixture from sides.
Mixture should be very smooth.
Transfer to bowl.
In small glass measuring cup sprinkle gelatin over apple juice and let stand to soften.
Set cup into pan of heated water and stir juice until gelatin is dissolved; cool slightly.
Add dissolved gelatin, grapes, and diced carrot to cheese mixture and stir to combine.
Spoon into 2 individual dishes; cover and refrigerate until firm, about 3 to 4 hours.
